Sitting at approximately 2700 ft above sea level, overlooking the confluence of the North & Middle Forks of the American River in Placer County, this vineyard experiences a dramatic diurnal temperature swing -- with hot, sun-drenched days giving way to crisp clear nights on a regular basis. The soils are iron-rich mud overlaying bedrock strata of slate & shale, ensuring a mineral-rich source of nutrients for the vines.
We pressed it whole cluster to tank for 5 days of cold settling, then racked to three barrels & one 55-gallon drum for fermentation. Barrels went through malolactic fermentation & were stirred regularly. Immediately prior to bottling the entire lot was racked together. This wine was bottled unfiltered & unfined.
Tasting Notes: On the nose, there is pear, baked apple, lemon peel & white pepper, with a subtle candied & buttery element. In the mouth, it is mouth-filling without being overly heavy. The pear & apple pie predominate, with a slight chamomile spiciness on the back end.
