Vallejo Vineyard is a small (three acre) vineyard planted in 2005 in southern Sacramento County, near the town of Wilton. The field blend of this vineyard produces our Elidé wine -- has consistently been one of our best wines. The vineyard is completely organic, with attention focused on vine health, irrigation methodology, hand-pruning and canopy management to produce the best fruit.
Since this vineyard has shown such great production, we've separated one ton of the Malbec, destemming to macrobin for fermentation and pressed to neutral oak barrels for elevage.
The nose explodes with cherry & cola, then proceeds to a bright herbal mixture: bay leaf, thyme, lavender. In the mouth, cherries again predominate, with red currant & more herbs: bay leaf, lavender. The body is lively & smooth, fine tannins carrying through to a medium-length finish of cola & sassafras.
